Brownie's with a Twist...

Chocolate... what a great word. I think this is something 99% of people like right?? If you don't, we can't be friends. Jokes, each to their own. However, I am a chocolate, lover and sometimes we just want a nice yummy slice of choccy cake or a yummy fudgy brownie. Of course you should have these foods and never deprive yourself of the things you love, go and enjoy them! But if we want a little choccy snack more often it’s helpful to have a choice to choose a more nutritionally dense one as remember our health is our wealth! 80/20 Rule always in my book!
Now as it is the Easter weekend, I wanted to bake some treats but with a healthy twist as we had Easter eggs and mini egg cakes and so I created some special Easter brownies made with… SWEET POTATO. Yes potato! They actually came out really well and although I decorated with some extra Easter treats you can top with whatever you like or have them just as they are throughout the year.
Super easy to make and just as rich and gooey as a normal indulgent brownie. 😊
You will need:
· 300g Sweet Potato
· 120g Nut Butter of choice
· 70g Maple Syrup
· 25g Cocoa Powder
· Pinch of Salt
· Chocolate chips/ anything of choice to decorate
Method:
1. Preheat your oven to 175˚C. Chop your sweet potato into chunks and steam on the hob over a pan of boiling water until soft. This will take anywhere from 10-20 minutes.
2. Once soft, empty into a bowl and mash until all the potato is smooth. Add in the nut butter, maple syrup, cocoa powder and salt. Mix together until combined and add a splash of water if the mixture is looking dry.
3. Spread evenly into a lined baking tin and top with some chocolate chips.
4. Cook for 20 minutes and once out the oven top with the rest of your desired sweet treat. Cut into 10 squares and enjoy. 😊
